Noda Salt Potato
A simple potato snack that highlights the character of 'Noda Salt,' made using traditional methods. The mellow saltiness of direct-boiling salt production—where seawater is slowly concentrated in wood-fired kilns—gently enhances the sweetness of the potato. In Noda Village, Iwate Prefecture, where Noda Salt is produced, there is a history of the 'Salt Road,' where salt was carried inland on the backs of oxen. Although the salt workshop was once swept away by the earthquake, it has been rebuilt on higher ground, and the tradition of salt-making continues to this day.
