Sake made from Okayama's Omachi Rice
A full-bodied cup brewed from what is said to be Japan's oldest sake rice: Sake made from Okayama's Omachi rice. Omachi is a high-quality sake rice discovered in 1859 in the present-day Omachi district of Naka-ku, Okayama City. It is considered an ancient, non-hybridized indigenous species and serves as the parent to famous varieties such as Yamada Nishiki and Gohommoku. Due to its tall stalks and susceptibility to lodging (falling over), it is difficult to cultivate, and at one point, production decreased so significantly that it was known as a 'phantom sake rice.' However, it has since made a comeback, and Okayama Prefecture still produces approximately 95% of all Omachi rice in Japan. Sake brewed with Omachi is characterized by its lush, wide-ranging umami and richness. The deliciousness of the rice can be felt strongly, and its charm unfolds even further when warmed.
