Sake Hitosuji (Limori Shuzo)
Upon taking a sip, a gorgeous aroma reminiscent of fruit gently rises, followed by a rich umami and a pleasant, dry finish. This profound cup changes its expression with every temperature, whether served chilled or warm. This local sake is brewed by Limori Shuzo in Akaiwa City, Okayama Prefecture. They are known as the brewery that revived the once-legendary sake rice, Omachi, and they use Akaiwa Omachi rice grown through contract farming with local farmers. Sake Hitosuji is an authentic local sake, committed to Ginjo brewing with a rice polishing ratio of 55% or less, as well as Junmai brewing.
