When poured into a cup, the plump and rounded umami characteristic of Omachi rice expands on the palate, followed by a moderate acidity that cleanly tightens the finish. It possesses a wide flavor profile yet maintains a sharp crispness, making it a perfect companion for food. Brewed by Kikuchi Shuzo, founded in 1878 in Tamashima, Kurashiki City, Okayama Prefecture. It was named 'Sanzen' (meaning 'brilliant' or 'glittering') with the wish that it would shine even more brightly among many other sakes. The brewery is also known for playing Mozart during the brewing process, and the sake is carefully crafted using high-quality water from the Takahashi River basin, Okayama's rice varieties such as Omachi and Yamada Nishiki, and the skills of the Bitchu Toji (master brewers). A local Kurashiki sake that possesses both depth and a refreshing aftertaste. It is a fine sake to be enjoyed slowly with meals, whether served chilled or warmed.
