It was named in honor of the 5th generation head, Takaji Ishiai, who was the restorer of the brewery's prosperity. The sake is brewed using Okayama-grown Omachi, Yamada Nishiki, and Asahi rice varieties, incorporating new techniques every year. Their Junmai Daiginjo has even received high scores in international evaluations. A single bottle where complex umami and rich aromas enhance your cuisine.
