Gozenshu 9 (NINE)
A new style of sake born from young sensibilities. This is 'Gozenshu 9 (NINE)' from the Gozenshu brewery, Tsujimoto Shoten. Founded in 1804 (Bunka 1), Tsujimoto Shoten is a long-established brewery in Katsuyama, Maniwa City. Centered around Maiko Tsuji, Okayama's first female Toji, a group of young brewers created NINE with the desire to 'make sake more enjoyable for the younger generation.' The name is inspired by the nine people involved in its development. Using 'Omachi,' a sake rice variety with ties to Okayama, and incorporating traditional Bodaimoto brewing methods, its hallmark is a fresh and aromatic flavor. It is clean and easy to drink, yet possesses great depth. It is a new Gozen-shu where tradition meets challenge.
