Kakegawa is a production area for kudzu, one of the seven herbs of autumn, and has long been known for this specialty along the Tokaido road. We combine high-quality starch extracted from kudzu roots with sugar, prepared using traditional handmade methods. A prime example is 'Chokuzu' from Keikaen, a venerable shop with over 120 years of history; they also offer seasonal flavors such as yuzu and ginger. Simply pour hot water and stir to see a glossy, translucent smoothness emerge. With every sip, a subtle sweetness slowly spreads, accompanied by a smooth texture that glides down the throat.
