Hachijo Koshatsu (Shima no Hana)
As you tilt your glass, the simple, rustic aroma of barley gently rises. "Shima no Hana" is a barley shochu brewed on Hachijojima. Hachijojima's shochu has a somewhat unique history. It is said that during the Edo period, when grain-based sake production was prohibited due to frequent famines, a merchant named Tansho Shoemon, who had been exiled from Satsuma, taught the islanders how to make sweet potato shochu—marking the beginning of the island's spirits. Eventually, barley began to be used on the island alongside sweet potatoes, and even today, several distilleries on the island continue to preserve their respective flavors. "Shima no Hana" is made from barley and barley koji, featuring a characteristically mellow finish. Whether enjoyed on the rocks or with hot water, it is a fragrant cup nurtured by the island's water and history.
