Goshinka
When poured into a glass, the fragrant aroma of roasted barley gently spreads. Goshinka is an island shochu produced by Taniguchi Shuzo, the only distillery on Izu Oshima. 'Goshinka' refers to the flames erupting from the crater of Mount Mihara, which towers in the center of the island—a sight that islanders have long revered as a deity. Founded in 1937 (Showa 12), Taniguchi Shuzo has continued to brew handmade sake using the subsoil water of Mount Mihara. Their representative product is barley shochu made with barley koji, and it is said that the current head of the brewery now handles everything personally, from brewing to bottling. There are also limited editions made with sweet potatoes. Whether enjoyed on the rocks or with hot water, this drink—bearing the name of the 'Island of Fire'—carries the quiet history of the island deep within its profound umami.
