Wakasaimo
In Hokkaido, where sweet potatoes do not grow, there is a confection that masterfully recreates the flavor of a roasted sweet potato: the Lake Toya specialty, "Wakasaimo." It all began with the founder, Kanjyu Wakasa, who wished to "create a roasted sweet potato in a land where they cannot be grown." It was born in 1930 (Showa 5). By kneading chopped Hokkaido-grown kelp into white bean paste made from snow-white Daifuku beans, they have skillfully even expressed the characteristic fibrous texture of a real roasted sweet potato. Both in appearance and taste, it is just like an actual roasted sweet potato. At the main store on the shores of Lake Toya, you can even enjoy them freshly made. Please try this famous confection, which is filled with the wisdom of the people of Hokkaido.
