Yoitomake

Named after the rhythmic chant used when loading and unloading logs, this is a famous confection from Tomakomai. Yoitomake is a roll castella produced by Sansei. Reflecting the character of Tomakomai as a paper-making city, the sweet is designed with the motif of logs being transported to factories; its name originates from the labor chant 'Yoito-make' used during log loading/unloading. It features a generous amount of jam made from Haskap, a rare berry native to Hokkaido, wrapped inside and also spread on the outside to represent tree bark. Since its release in 1953, the combination of sweet and sour jam with simple castella has remained popular. Often called 'Japan's most difficult confection to eat,' the luxurious amount of jam—so much that it makes your hands sticky—creates an unforgettable flavor. It is a one-of-a-kind masterpiece that reflects the local culture of Tomakomai.
