Kita no Katsu

This is a fine sake from Nemuro, brewed in the easternmost part of Japan. Kita no Katsu is a Japanese sake brewed by Usui Katsusaburo Shoten, founded in Meiji 20 (1887). The founder, who moved from Niigata, began sake brewing in Nemuro—a place where rice does not grow—out of a desire to provide more affordable sake to the local people, as sake transported from places like Osaka was expensive. As the easternmost brewery in Japan, they continue to uphold their traditions to this day. Its specialty is a dry, crisp flavor achieved through low-temperature fermentation that takes advantage of the severe winter cold. When paired with Nemuro's seafood, such as 꽃게 (flower crab) or Pacific saury, the flavors of both are enhanced. It is a rare sake sometimes called a 'phantom local brew,' making you want to savor it slowly at this remote edge of the land.
