Goryo
As you tilt the glass, a soft umami characteristic of Hokkaido rice spreads across the palate with a clean finish. It is a clear-tasting local sake that pairs beautifully with Hakodate's seafood cuisine. Brewed by Hakodate Goryo-no-Kura. This brewery is actually a brand-new establishment that opened in 2024. In the Kameo district, where many breweries once existed, production had ceased during the Showa era. "Goryo" is the first local sake to be born in Hakodate in approximately half a century. The brewing process utilizes ultra-soft water from the Matsukura River system in Hakodate, along with Hokkaido rice varieties such as Suisei, Ginpu, and Kitashizuku. It is a new pride of Hakodate, relighting a flame that had once gone out.
