Takasago Shuzo
This local sake has continued to be brewed in Asahikawa with the aim of creating a sake that is second to none in the world. Takasago Shuzo was founded in 1899 as Kohiyama Shuzoten. The name of its flagship brand, 'Kokushi Muso', originates from an anecdote in China's Records of the Grand Historian, where the famous general Han Xin was praised as a 'Kokushi, Muso' (an outstanding person with no equal in the world). With the third-generation owner's wish to create a sake that would be passed down to future generations, the brand has spread its name nationwide as a dry local sake since its release in 1975. Asahikawa is a cold region ideal for sake brewing due to its significant temperature fluctuations. Brewed with the pure underground water of the Daisetsuzan mountain range, this dry sake is a perfect supporting actor for northern dining, pairing beautifully with Asahikawa ramen and salt-seasoned hormone (offal).
