Kamikawa Taisetsu
As you tilt your glass, a clear and transparent flavor gently permeates your body. It is a pure cup, free of impurities, born from the subsoil water of the Daisetsuzan Mountains and Hokkaido rice. Kamikawa Taisetsu Shuzo was established in Kamikawa Town in 2017. This notable brewery was created by taking over a dormant brewery in Mie Prefecture and relocating it to the foot of Mount Daisetsu, the highest peak in Hokkaido. Driven by the ambition to 'revitalize the town through sake brewing,' they aim to convey the beautiful scenery and Hokkaido's food culture through their sake. The brewing process is supported by subsoil water sourced from perennial snow. This is a local sake from a young brewery that is breathing new life into the Hokkaido sake scene.
