With a single sip, a clear umami flavor spreads, brewed using the subsoil water of Akan. When enjoyed alongside Kushiro's robatayaki (fireside grilling) and seafood, it is a local sake that allows you to experience the entire food culture of this port town. The brewer is Fukuji Sake Brewery, the sole brewery in Kushiro. Founded in 1919 as Shikishima Shokai, a merchant dealing in various alcoholic beverages, they built their current brewery in the Sumiyoshi district in 1922 and began brewing "Fukuji." As its auspicious name suggests—meaning "to govern good fortune"—it is a drink that brings happiness to the local community. Approximately 90% of the ingredients are Hokkaido-grown rice, and it is brewed with pure water filtered by the nature of eastern Hokkaido. It is Kushiro's pride, a local sake polished by the harsh winters of eastern Hokkaido.
