Wakasaimo
Despite the name containing 'imo' (potato), it actually contains no sweet potatoes. One bite reveals a simple sweetness and moist texture so much like a real roasted sweet potato that you will be surprised. It was born in 1930. The beginning was when the founder, Hansuke Wakasa, decided to create a specialty for Lake Toya Onsen, thinking, 'I want to make roasted sweet potatoes even in land where sweet potatoes cannot grow.' He used Lake Toya's famous Daifuku beans for the white bean paste and added finely shredded kelp to recreate the fibers of a potato. The surface is brushed with egg soy sauce and baked to mimic the toasted color of a roasted sweet potato. Freshly baked ones enjoyed at the main store by the shores of Lake Toya offer an especially exquisite deliciousness.
