The ingredient used is the rare "Gome Kombu," which grows only in the waters near Hakodate and its surroundings. It earned its name from the basket-like textured pattern on its surface. It is characterized by a particularly strong viscosity among kelp varieties due to its high mucilage content, which serves as a thickening agent. While it was once often overlooked because it was harvested alongside Ma-kombu, it is now one of Hakodate's most iconic seafood treasures.
