Tenjindo Tsutsumi Yubeshi
This is 'Yubeshi,' a traditional confection passed down in Takahashi, the castle town of the Bitchu Matsuyama Domain. It is said to have originated when a rice cake sweet made with locally grown yuzu was presented to Lord Itakura Katsusada, the feudal lord during the Edo period. Later, Yamada Hokoku, a scholar of Yomeigaku who was responsible for rebuilding the domain's finances, encouraged the planting of yuzu trees and is said to have spread Yubeshi to Edo and Osaka. Made using traditional methods with rice and yuzu from Takahashi, the chewy dough retains the vibrant aroma of yuzu. This is a piece that allows you to feel the weight of history through the harmony of yuzu flavor and the sweetness of the bean paste.
