Kikkodo - Murasuzume
A traditional confection that Kikkodo, with its main store in the Bikan Historical Quarter of Kurashiki, has continued to make since Meiji 10. It features high-quality tsubu-an (chunky red bean paste) softly wrapped in a thin, crepe-like skin made from eggs and flour. While the founder, Daiyoshi Yoshimoto, was searching for a specialty sweet for Kurashiki, he was inspired by the shape of a woven hat (amigasa) and the golden color of rice ears. It is said that it was named 'Murasuzume' because the sight of people dancing in hats during the Obon harvest dance resembled sparrows swarming around rice ears. At a time when rice flour was the mainstay, this was a revolutionary item, much like a Western-style pastry, using wheat flour and eggs. With its adorable half-moon shape and the gentle sweetness of the bean paste wrapped in moist skin, it is a perfect confection to enjoy with tea, alongside the atmosphere of Kurashiki.
