Choko-Chofu

A playful creation that rearranges 'Chofu,' one of Okayama's four great famous confections, with chocolate. Chofu is a traditional Japanese sweet consisting of chewy gyuhi (sweet rice cake) wrapped in a thin castella sponge, said to have been invented by a craftsman from Kurashiki at the end of the Edo period. 'Choko-Chofu' layers the sweetness of chocolate onto that signature chewy texture of Chofu. It is finished as a new flavor where the gentleness of Japanese confectionery meets the richness of Western sweets. It is a slightly unexpected transformation of a familiar Okayama specialty.
