Daimonji Juman-goku
Juman-goku is a signature confection representing Tsuyama. It features smooth fine-grained red bean paste (koshian) wrapped in soft gyuhi (sweet rice cake) and sandwiched between thin layers of dough, creating an elegant, melt-in-your-mouth delicacy. It is said that Daimonji created Juman-goku by repeatedly refining the recipe of 'kanmochi,' a traditional chilled mochi that was once loved as a tea sweet by the lords of the Tsuyama Clan. The name is derived from the kokudaka (rice production rating) of the Tsuyama Domain, which was ruled by the Matsudaira clan. This historic confection allows you to enjoy the harmony between carefully simmered red bean paste from Hokkaido and soft gyuhi.
