One of Okayama's representative famous confections, 'Tsuru no Tamago.' It is an elegant Japanese sweet with a lovely white appearance mimicking a crane's egg, featuring a fluffy, marshmallow-like texture with yolk bean paste hidden inside. 'Tsuru no Tamago' was devised by Jiushiro Shimoyama, the founder of 'Shimoyama Shojuken,' which was established in 1887. It is said to have been created after being captivated by the sight of cranes dancing gracefully in Okayama's Korakuen Garden. The confection shines with a fusion of Japanese and Western styles, incorporating marshmallow—a rarity at the time—into a traditional sweet; it became so well-known that it even appeared in Fumiko Hayashi's 'Vagabond Tales.'
