Daishiya Seika Murasuzume
A traditional Kurashiki confection, "Murasuzume," crafted by Daishiya Seika. This adorable, half-moon-shaped Japanese sweet consists of a thin, egg-based crepe-like dough wrapped around a generous amount of chunky red bean paste. Murasuzume was created in 1877 (Meiji 10) by Kurashiki's Kikkado, inspired by the shape of a woven hat (amigasa) and the golden color of ripening rice ears. The name is said to derive from the sight of people dancing with hats on their heads looking like sparrows gathering around rice ears. Daishiya Seika's Murasuzume offers a flavor where the moist dough and bean paste harmonize perfectly. Often referred to as a Japanese-style crepe, it has a soft mouthfeel.
