Murasuzume is a famous confection born in Kurashiki, featuring bean paste wrapped in a thin skin reminiscent of a crepe. It was devised in 1877 by Kikkado in Kurashiki, and it is said that the then-mayor named it after the shape of an 'amigasa' (woven hat). The name is also said to originate from the 'Murasuzume' summer festival held to pray for a bountiful harvest. This particular item is carefully baked by Nakayama Shohyodo, founded in 1950. The fragrant, moist texture of the skin pairs perfectly with the gentle sweetness of the chunky bean paste (tsubu-an). It offers a simple and warm flavor that retains the character of being hand-baked one by one. Its adorable appearance, reminiscent of a woven hat, embodies the very atmosphere of the Kurashiki Bikan Historical Quarter with its white-walled streets.
