Born in the area of Kurashiki/Kojima, where the scent of the sea drifts, this is a yokan (sweet bean jelly) infused with salt. It is crafted by Shiojiri Kishitsudo, founded in 1910. This Salt Yokan was devised during the Taisho era out of the first generation's desire to 'create sweets that utilize local salt' in Kojima, where salt production was once thriving. It is cooked using only domestic red beans, sugar, local Nozaki salt, agar, and starch syrup, with no preservatives used at all. The subtle saltiness that cuts through the sweetness further enhances the flavor of the red beans. This simple yet deep flavor has been loved locally for a long time.
