Tenjindo Saru Senbei (Monkey Crackers)

These are simple, egg-flavored crackers baked by Tenjindo, a long-established shop in Takahashi. Tenjindo is a store that has continued since the Edo period and is also known for Takahashi's specialty, Yubeshi (a Japanese confection featuring the flavor of yuzu). The name 'Saru Senbei' (Monkey Crackers) comes from the Japanese macaques that have long inhabited Mount Gyu, where Bitchu Matsuyama Castle towers. This sweet was created to commemorate the opening of the Gyuuzan Natural Zoo in 1955; even though the zoo has since closed, this cracker alone continues to be produced. The dough, made with plenty of flour and eggs, is characterized by its light texture and gentle sweetness. The crispy texture and rich egg flavor make it a perfect accompaniment to tea.
