Nakayama Shoyodo Chofu
This is 'Chofu,' a traditional confection made by Nakayama Shoyodo in Okayama City, and is counted as one of the four great famous confections of Okayama. It consists of chewy gyuhi (sweet rice paste) rolled in a thinly baked castella sponge. The name 'Chofu' is said to derive from 'Cho,' which refers to the payment of cloth as tax in ancient times. This famous Okayama confection is said to have been devised by confectionery artisans around Kurashiki during the late Edo period, and today many Japanese confectionery shops within the prefecture produce it. Nakayama Shoyode is one of the establishments that carries on this tradition. The moist sponge and the soft texture of the gyuhi inside create an elegant sweetness that is perfect with tea.
