Sato Gyundo Yuzubeshi (Assortment)
A traditional confection from Takahashi, said to have been presented as a tribute sweet to the Bitchu Matsuyama Domain during the Edo period. Sato Gyundo, an established shop founded in 1830, continues to pass down the highly aromatic yuzu-scented Yuzubeshi. Yuzubeshi (yuzu mochi) is a type of mochi confectionery derived from preserved foods, made by kneading glutinous rice, sugar, and starch syrup with finely chopped yuzu peel and then drying it. It has long been produced as portable food and for tribute offerings, with Takahashi and Yakage in Okayama known as representative production areas. Sato Gyundo is a venerable shop with records showing that Atsuhime (Tensho-in) requested Yuzubeshi when traveling to Edo. With the refreshing aroma of yuzu and an elegant sweetness that spreads through the chewy dough, this is a deeply flavorful item where the history of the castle town lives on.
