Aoki Shofu-an Kintsuba
Red beans are packed densely behind a thin skin. Because it is simple, the flavor of the ingredients stands out. This kintsuba is made by Aoki Shofu-an in Sennan, Osaka. Kintsuba is a Japanese confection made by setting whole red bean paste with agar and wrapping it in a thin layer of flour before baking; its roots are said to be the 'Gintsuba' that originated in the Kansai region. Because the ingredients used are simple, its charm lies in how directly the flavor of the red beans themselves and their elegant, subtle sweetness are conveyed.
