Tsuruya Hachiman Hoshi Kohaku Yamashimizu
Crunchy on the outside, moist on the inside—a visually refreshing Japanese confection that offers the pleasure of two different textures. Tsuruya Hachiman is a long-established Osaka shop that has inherited the techniques of the famous Genroku-era shop 'Toraya Iori' since its founding in Bunkyu 3 (1863). 'Hoshi Kohaku Yamashimizu' is an amber sugar candy (Kohakuto) made by boiling and hardening agar and sugar, then carefully drying only the surface. The surface features crystallized sugar for a crunchy texture, while the inside remains a soft jelly-like consistency, creating a delightful contrast. With a beautiful appearance like a jewel gently translucent to light and an elegant sweetness that melts delicately in the mouth, it is a perfect item for summer gifts that brings a sense of coolness to the eyes.
