Nagoya Cochin
This manju (steamed bun) is named after Nagoya Cochin, one of Japan's three major native chicken breeds. Nagoya Cochin was born in Aichi through the crossbreeding of Buff Cochin, which arrived from China during the Meiji era, with local native chickens. It is a prestigious breed enjoyed for both its meat and eggs, held in high regard alongside Hinai Jidori and Satsuma Jidori. Its eggs are famous for their pale pink shells and rich, deep yolks. We have gently enveloped a rich, flavorful bean paste made from these Cochin eggs within a moist, soft dough. With every bite, the mellow umami unique to this native chicken egg spreads across your palate. Enjoy the taste of Nagoya's pride in an easy-to-eat Japanese sweet. This is a quintessential local souvenir that pairs perfectly with tea.
