Boil them freshly harvested and take just one bite. After a pleasant, crisp crunch, a subtle sweetness and umami spread across your palate. A spring delicacy with very little bitterness—these are the bamboo shoots of Kiyama Town. Located on the eastern edge of Saga Prefecture, Kiyama Town is a land blessed with bamboo groves. In spring, locals carefully harvest each shoot one by one as they emerge from the earth. For bamboo shoots, where freshness is everything, boiling them immediately after harvesting is best. The tender tips are perfect for tempura or tossed with sansho leaves (kinome), while the base is ideal for rich simmered dishes or mixed rice (takikomi gohan). The aroma and texture unique to fresh harvests are a true seasonal luxury. Please enjoy the blessings of the spring mountains while they are in season.
