Takesaki Crab

When you crack the shell, you find densely packed meat and moist, rich internal eggs (una-ko). Takesaki Crab is a type of blue crab where umami surges with every bite. The crabs are harvested in the Takesaki district of Tara Town, Saga Prefecture, and they grow in the Ariake Sea, which boasts the largest tidal range in Japan. In the vast tidal flats exposed at low tide, plankton and small animals bask in the sunlight; because the crabs feed on these, their meat is said to become sweet and exceptionally flavorful. The richness of the Ariake Sea is embodied in their olive-colored shells. The males, with their sweet meat, are in season during summer, while the females, with their meltingly rich internal eggs, are in season during winter. Whether steamed or in miso soup, the scent of the sea and sweetness overflow with every bite. If you visit Tara, please be sure to taste this seasonal delicacy.
