Shiroishi Onions
When you cut into them, juice overflows. Even when eaten raw, they have little pungency and are quite sweet. When cooked, a melt-in-your-mouth richness emerges—these are the onions of Shiroishi Town. Shiroishi Town is a major production hub, accounting for approximately 70% of Saga Prefecture's onion yield. Saga Prefecture boasts the second-highest production volume in Japan, following Hokkaido. The secret lies in the heavy, clay-like soil rich in minerals that spreads across the reclaimed lands of the Ariake Sea. This fertile earth nurtes onions with intense sweetness. Enjoy them crunchy and raw in a salad, or slow-cooked until tender and syrupy. The 'new onions' available particularly in spring possess an exceptional freshness, making them a pleasure unique to this season.
