Kanzaki Somen

Lift a strand and slurp. A smooth glide down the throat paired with a firm, resilient texture. This is Saga's representative hand-stretched somen, with a subtle aroma of wheat. The origins of Kanzaki Somen date back about 390 years to 1635. Legend has it that after local residents tenderly nursed a wandering monk (unsui) who fell ill at the Kanzaki Station on the Nagasaki Kaido, he bestowed upon them the secret technique of hand-stretching. The clean waters of the Shirahara River, the mild climate, and the cold winter air—the blessings of this land nurture these smooth noodles. Served chilled in summer or as hot nyumen in winter, it is a flavor that has been loved for generations throughout the year.
