Ureshino Onsen Yudofu

Inside the simmering pot, the edges of the tofu gently unravel. The simmering liquid gradually turns a cloudy white. With a single spoonful, it melts on your tongue like light snow, releasing the gentle sweetness of soybeans—this is Ureshino Onsen Yudofu. The secret lies in the smooth hot spring water of Ureshino. Known as one of Japan's three great waters for beautiful skin, its slightly viscous warmth transforms the tofu into a creamy texture and dyes the broth the color of soy milk. It has long been cherished as an essential part of breakfast at local hot spring inns. Tofu made from locally grown soybeans is simmered slowly in the hot spring water. You can enjoy even the remaining broth, which becomes mellow and delicious. Please enjoy this melting bite alongside the hot, white steam.
