Ujiotsu Cabbage of Ogi

When you cut into it, there is a pleasant, crisp sound. When you peel off a fresh leaf and eat it, it is sweet even when raw. Whether lightly sautéed or used in a salad, the soft, curled leaves highlight their natural sweetness. Ujiotsu is a part of Ogi City that spreads across the rich earth of the Saga Plain. It was once a bustling post town on the Nagasaki Kaido and a port town on the Ujiotsu River, earning it the nickname 'The Naniwa (Osaka) of the West.' This fertile plain produces cabbage with exceptionally soft leaves. The season is from winter to spring. Use it coarsely chopped in hot pots or shredded as a side for fried foods. Please try a crisp, juicy, and sweet bite, perhaps even raw first.
