In the calm waters of Imari Bay, there are the beautiful 'Iroha Islands' consisting of forty-eight islands. Named after them, they are called 'Iroha Oysters,' identifiable by the black marble-like patterns on their shells. The mineral-rich seawater flowing from the mountains nurtures their plump, intensely flavorful meat. The season is winter. Enjoy them steamed or grilled while hot.
