This specialty comes from Yobiko in Karatsu City, Saga Prefecture. Kensaki squid and Aori squid swimming in tanks are quickly prepared only after an order is placed. This is precisely why it possesses a level of transparency and texture that cannot be tasted anywhere else. It is said that this style of 'Ikizukuri' spread from the squid restaurants in Yobiko during the Showa era. A wonderful bonus is that the remaining parts can be served as tempura or salt-grilled tentacles. It is a dish that allows you to taste the fresh sea itself, with the star squid changing with every season.
