Mutsugoro (Ariake Sea Delicacy)
Mutsugoro kabayaki, grilled to a fragrant perfection coated in a sweet and savory sauce. The plump flesh is packed with the unique umami developed in the tidal flats of the Ariake Sea. Mutsugoro is an amphibious relative of the goby that lives only in parts of the Ariake and Yatsushiro Seas in Japan. Able to breathe through both gills and skin, their sight of scurrying across the tidal flats when the tide is out is a symbol of this sea. The season is summer, from May to August. They are caught using the traditional 'mutsukake' fishing method on the low-tide flats. This sweet and savory flavor, simmered in syrup, is a delicacy unique to the Ariake Sea that can only be encountered during the summer. Please try it as kabayaki or kanroni.
