In the Chikugo region, where double-cropping of wheat is common, udon has deeply taken root as an everyday food. Much like Hakata udon, the culture values soft noodles that blend with the soup rather than a chewy texture. A gentle broth infused with dried sardines (iriko) and kelp softly envelops the noodles. It is a comforting flavor that glides smoothly down the throat. Adding burdock tempura (goboten) or fish cakes (maruten) makes it an even more blissful bowl.
