Umeshikin

Umeshikin is a brand that Umeshikin Yamakawa of Shikokuchuo City, Ehime, has continued to brew since its founding in the 5th year of the Meiji era. The name was inspired by the plum groves that once spread across Kanagawa, where the brewery is located. As a highly skilled producer that has won gold awards at the National New Sake Awards more than thirty times, the Toji (master brewer) selected as a 'Modern Master Craftsman' deliberately handles processes requiring the five senses by hand rather than leaving them to machines. A deep umami born from an uncompromising brewing process. Whether chilled or warmed, it complements food and makes you want to savor it deeply—a local sake that Ehime is proud of.
