Yellow chives are grown using a blanching method on green chives, where covers are placed over the new shoots to block sunlight, resulting in a pale and beautiful yellow finish. Cultivation in Okayama began during the Meiji era and expanded dramatically once the cultivation method was established. Today, Okayama is a major production area responsible for about 70% of the national share. They feature a mild flavor with an elegant sweetness and aroma. In addition to egg dishes and hot pots, scattering them over Okayama's famous Bara-zushi makes the colors stand out remarkably. The pleasant, crisp texture also adds a refined touch to any dish. They are the golden supporting actors indispensable to the dining tables of Okayama.
