When the plate is brought to the table, you can't help but widen your eyes—it is pitch-black fried rice. However, once you take a bite, a fragrant aroma is followed by a gentle sweetness that makes it easy to keep eating. Surprisingly, its roots are said to trace back to the curry restaurant 'Indee Ra' in Shibuya, Tokyo. It is believed to have started when Tatsumi Idei, a native of Okayama, brought the recipe back to Okayama in 1966 as an independent branch owner and served it in his own shop. To suit the preferences of the people in Okayama, who favor slightly sweeter flavors, he reportedly took time to develop it into a local specialty. The secret behind its black color is the unique Ebimeshi sauce finished with caramel and sauce. With its striking appearance and gentle sweetness, it has now become a true soul food of Okayama.
