Kagamino Hime Chili Pepper

The 'Hime Chili Pepper,' a specialty of the Okutsu district in Kagamino Town, is a chili pepper renowned for the heat that arrives just a few seconds after eating. It possesses about 70% of the spiciness of Togarashi (red chili pepper) while also offering excellent flavor. Measuring approximately 15cm in length, it is 2 to 3 times larger than typical chili peppers, and its most distinctive feature is its curled tip. Due to this appearance, it is also known locally as 'Dojo (loach) Chili Pepper.' It is a native variety that has been grown for self-sufficiency across generations in the small settlements of Okutsu; once identified as an ancient Japanese variety, it was named 'Hime (Princess) Chili Pepper.' Today, an NPO leads the effort, with contract farmers cultivating it with great care. Processed into ichimi and shichimi powders, dressings, and miso, it serves as a perfect supporting actor that adds a subtle kick to dishes. It is a masterpiece of both spice and umami that Kagamino continues to protect and pass down.
