Makomotake (Zizania latifolia)
Satosho Town's specialty, 'Makomotake,' is an autumn delicacy with an addictive crunchy texture. It is formed by the enlargement of the stem of the Zizania plant due to the action of smut fungus. Rather than being a relative of bamboo shoots, it has a crispness similar to asparagus. In Chinese cuisine, this vegetable is highly valued as a premium ingredient. Satosho Town began cultivating it in 2009 as an initiative to address abandoned farmland. Full-scale cultivation started in 2011, with producers and enthusiast groups working to promote its widespread use. It has almost no bitterness or strong aftertaste, and is also wonderful for being low in calories and rich in dietary fiber and potassium. The peak season is from September to November. When prepared as a stir-fry or tempura, you can enjoy its subtle sweetness and refreshing texture. Please try this taste of autumn grown in Satosho.
