Mimasaka Black Beans
Known as 'Sakushu Kuro,' these are the highest grade black beans essential for Osechi cuisine from the Mimasaka region. They are large-grained and glossy, and when simmered, they offer a smooth texture and a rich, spreading flavor. The Shoei area, where they are produced, has weather conditions very similar to the Tanba region in Hyogo Prefecture, a famous producer of Tanba black soybeans. The temperature difference between day and night in summer, along with the thick morning mists, nurtures large-grained, deep, and flavorful black beans. Okayama Prefecture is one of Japan's leading producers of black soybeans, and among them, Sakushu Kuro is carefully cultivated as a premium brand. In autumn, large-grained, chewy black edamame also become available, offering an unforgettable deliciousness. Every single bean that graces the New Year's table is packed with the power of the Mimasaka earth.
