Hiruzen Daikon
Grown in the cool air of the Hiruzen Plateau, 'Hiruzen Daikon' boasts exceptional juiciness and sweetness. They grow under abundant sunlight on the plateau at altitudes of 450m or higher. The soil here is a volcanic ash soil known as 'Kuroboko,' created by the eruptions of Mount Daisen. This fine-grained soil, which combines both water retention and permeability, is perfect for cultivating daikon radish. The process of 'kanjime' (cold tightening)—where the radish stores nutrients gathered during the day to protect itself from the nighttime cold—produces sweet and delicious radishes. The peak season is from November to December. With its crisp texture and natural sweetness, it is versatile enough for use in oden, salads, and even pickles.
