An unexpected specialty of Niimi City is "Niimi Caviar," made from sturgeon eggs. You will surely be surprised to learn that authentic caviar is being produced in this mountainous town. efforts in Niimi City date back about 20 years. To utilize the clear streams of the Takahashi River system, the Niimi Fisheries Cooperative began raising sturgeons. It is said that the mineral-rich hard water provided by the limestone of the karst topography resembles the water quality of Europe, the sturgeon's native habitat. After 12 years of trial and error, they succeeded in producing domestic caviar. Each sturgeon, raised for over 7 years from the egg stage, is inspected individually to select only eggs with the optimal level of maturity. This is a masterpiece of rich, individual grains nurtured by the nature of Niimi, perfect for savoring on special occasions.
